Tofu Steaks with (Jaime's) Tahini Miso Dressing
Ingredients:
Firm tofu
Olive oil
Sesame seeds
Directions:
1. Fry tofu steaks in olive oil until golden on each side
2. Serve on bed of spinach, drizzle dressing on top and sprinkle sesame seeds
Pesto
Ingredients:
Bunch of pesto leaves
2 tbsp olive oil
2 garlic cloves
2 tbsp pine nuts (or sub cashews)
1 tbsp nutritional yeast
Directions:
Put all ingredients into food processor and mix. Serve on sandwiches, on burgers, or eat with pasta!
Honey Roasted Root Veggies
Ingredients:
2 beets
1 sweet potato
1/2 sweet onion
1 tbsp honey
1 tbsp olive oil
pepper
Directions:
Preheat oven to 400F. Cut up veggies and mix with olive oil, honey, and pepper and roast for 30-40 minutes until ready.
